We have the sweetest, juiciest peaches! You bought a ton and now you don’t know what to do with them? They are great for tons of things, including these examples!
- Peach Pie
2 T. Corn Starch
1 C Sugar
1 Pkg Peach Jell-0
2 C Water
Mix the corn starch, sugar, and Jell-O. Add water and boil till clear and slightly thickened. Slice peaches and put in one baked pie crust shell. Let the juice cool and thicken and pour over sliced peaches, refrigerate and serve with whipped cream. (Recipe courtesy of Carolyn Boyack)
2. Peach Cobbler
10 to 12 Peaches
2/3 C Sugar
2 T Flour
1 1/2 T. Cinnamon
Mix the above together. Put in a pan and dot with 2 T. Butter. Then mix the following:
1 C Flour 1 1/2 T. Baking Powder
1 Egg
1/2 T. Salt
2 T. Sugar 1/3 C Shortening
3 T. Milk
Put 2nd mixture on top of peach mixture and bake 25-30 minutes at 350 degrees F. Double for a dripper pan (if you double recipe bake for 45 minutes). (Recipe courtesy of Carolyn Boyack)
3. Peach Ice Cream
3 C Mashed Peaches
2 1/2 C Sugar
1/4 C Lemon juice
1 Can Evaporated Milk
1 Quart Half and Half Milk
1 Pint Whipping cream
Mix together peaches, sugar, and lemon juice. Let sugar dissolve (about 1 1/2 hour).
Add evaporated milk, Half and Half, and whipping cream. Put all ingredients in ice cream freezer and freeze for desired time. (Recipe courtesy of Carolyn Boyack)
4. Peach Cake
Cake:
1 1/2 C Sugar
2 Eggs
2 C Flour
1 T. Cinnamon
3/4 C oil
1 1/3 C Mashed Peaches
1 T. Baking Soda
1/4 T. Salt
Mix the ingredients listed above and bake at 350 degrees F for 35 min.
Frosting:
1 C sugar
1/2 C butter
2 egg yokes
1 T. flour
2/3 C evaporated milk
Mix together frosting ingredients and bring to a boil on a stove. Stir for ten minutes. Remove from heat and add 1 teaspoon vanilla and 1/2 cup chopped pecans. Let cool. Frost cake. (Recipe courtesy of Carolyn Boyack)
5. Peaches and Cream
Several peaches, depending on how much you want
1 can evaporated milk
Whipped cream
Wash, peel, and slice peaches. Place in a shallow bowl or baking pan. Pour milk over peaches until they are just covered. Let sit for 1 hour. Serve topped with whipped cream.
6. Cinnamon Peach Jam
3 3/4 c. peaches, washed, peeled, pitted, and diced
1/4 c. lemon juice
4 1/2 Tbsp. pectin
5 c. sugar
1 tsp. vanilla extract
2 tsp. cinnamon
Blend ingredients together in blender. Pour into saucepan and bring to a boil. Let boil for 1 minute, stirring constantly. Skim foam from top. Place jam in jars. For long-term storage, process for 10 minutes in water bath.
7. Peach Slices
Wash, pit, and slice peaches. Great for snacking, canning, freezing, dehydrating, or freeze drying.
To can:
Make a syrup with water and sugar by boiling them together until it is a consistency you like. Amounts will vary based in how sweet your peaches are and how much sugar you want to use. Peel, pit, and slice peaches. Pack into jars and add syrup to 1/2 inch head space. Process in water bath for 20 minutes (pints) or 25 minutes (quarts).
8. Fruit Smoothie
1 1/2 c. milk
1 c. vanilla yogurt
2-3 peaches
1/2 c. strawberries
1/2 c. blueberries
1/2 c. blackberries
1 banana, peeled
1 c. ice (optional)
Mix all ingredients in blender until smooth. For more intense flavor, freeze fruit before blending and skip ice.
9. Peach Butter
3 lbs. peeled, pitted, and sliced peaches
1 c. sugar
1/4 c. lemon juikce
1/2 c. water
Mix all ingredients in crockpot. Cook on low 2 1/2 hours. Prop open lid and cook for 2-3 more hours, or until peaches are soft. Blend together. Refrigerate.
10. Peach Crisp
3/4 c. flour
2/3 c. brown sugar
1/2 c. oats
1/4 tsp. cinnamon
1/2 c. butter
Preheat oven to 350 degrees F. Grease a baking dish. In a bowl, stir together the flour, brown sugar, oats, and cinnamon. Add the butter and mix.
6 large peaches
3 Tbsp. butter, melted
3 Tbsp. flour
2 Tbsp. water
1/3 c. sugar
1/2 tsp. cinnamon
1/4 tsp. nutmeg
Peel, slice, and pit peaches. Whisk together melted butter, flour, water, sugar, cinnamon, and nutmeg. Pour mixture over peaches and toss. Put peaches in a pan. Add the other mixture on top. Bake for 30-40 minutes.
